His approach is rooted in organic and biodynamic principles, avoiding herbicides and heavy intervention, relying instead on native yeasts and minimal sulfur use.
Denis emphasizes the uniqueness of indigenous Croatian varieties, particularly Plavac Mali — most widely planted on Pelješac, especially in Postup and Dingač — and Grk, a genetically unique grape with only functional female flowers.
He believes the future of Croatian wine lies in its native grapes and continued dedication to quality.
